Creamy Tomatillo Salsa Done RIGHT!!!!

Hello King of Kings Superior Nutrition Family!!! And all of you salsa lovers... and we are not talking about the dancing type! We are talking to all of you (and you know who you are) who used to go out to our favorite New Mexican Restaurant and have about 2-3 refills on the chips and salsa before even placing your order!!! Although memories of those old habits are not forgotten we will have the desire and urge for the chips and salsa - but now in moderation and with a healthier option. Salsa is on the "forbidden list" mainly due to the excessive combination of tomatoes, sodium, additives and did we say SODIUM - that we try to stay away from! With Easter Weekend upon us we wanted to get you a recipe that is approved, amazing and that is a multifuctional condiment. Creamy Tomatillo Salsa is always a fan favorite and one of my signature salsas, but I was determined to create a healthier version where we are not deprived and of course with a healthy homemade version of chips that were made in the airfryer.


Here are the additional ways you can use this Creamy Tomatillo Salsa:

  • Marinade for your protein

  • Sauce for the top of cooked protein

  • Spread inside your low carb tortilla wrap

  • Dip for your cut cucumbers, bell peppers or celery

  • Chips and salsa

  • Add this to your tortilla burgers

  • Salsa for your tacos

  • Salad dressing (add some vinegar for more volume if you desire)


Creamy Tomatillo Salsa


1 lb of Tomatillos

3 White Sweet Onions (pictured) or 1 Medium White Onion

4 Garlic Cloves

2 Jalapenos

Cilantro

1 Avocado (this is what makes it "creamy" and this is optional)


Cook tomatillos, onions, garlic and jalapenos in frying pan with spray oil until everything is soft and charred. If you would like to put all of these items in a grill basket and put them on your BBQ Grill that is another GREAT option.


Once everything from pan is cooked and "mushy" mix all of the items in your food processor or NINJA. Then add your cilantro (to taste) and avocado to the mix and refrigerate until you are ready to serve. ENJOY!!!!




Chipotle Chile Garlic Lime Tortilla Chips


Corn Tortillas

Cooking Spray & "I Can't Believe It's Not Butter" Spray

Garlic Powder

Chipotle Chile Powder

1 Fresh Lime


Cut up fresh corn tortillas in triangle sizes of your choice

Put them in a bowl and use spray oil and "I Can't Believe It's Not Butter" spray to coat them. Add Garlic Powder, Chipotle Chile Seasoning (or any spicy non salt seasoning of your choice) and fresh squeeze lime juice. Mix everything around to make sure all sides of corn tortilla triangles are coated evenly and put them in air fryer...


And there you have your it.....Chipotle Chile Garlic Lime Tortilla Chips --- YUMMY!!!!!!!!!!! You can also make them smaller and add them to the top of your salad if you meal plan calls for corn tortillas. Be sure to keep track of your serving sizes!!!! We are warning you - that is how good these chips are!
